Ingredients:

  • 2 cups cooked white rice
  • 2 cups fresh broccoli florets, steamed
  • 2 cups shredded cheddar cheese, divided
  • 1 cup cooked chicken breast, shredded (optional)
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1/4 cup breadcrumbs or crushed crackers (optional topping)
  • 1 tbsp melted butter (optional)

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Mix together cooked rice, steamed broccoli, 1 1/2 cups shredded cheddar cheese, shredded chicken (if using), condensed cream of chicken soup, milk, garlic powder, onion powder, salt, and pepper.
  3. Pour the mixture into the prepared baking dish. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
  4. Add an optional crunchy topping by mixing breadcrumbs or crushed crackers with melted butter. Sprinkle over the casserole.
  5. Bake uncovered for 25-30 minutes, or until the cheese is bubbly and golden brown. Let cool for 5 minutes before serving.
