Ingredients:


– 1 1/2 cups (180g) all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon baking soda
– 1/4 teaspoon salt
– 1/2 cup (115g) unsalted butter, softened
– 1 cup (200g) granulated sugar
– 2 large eggs, room temperature
– 1 teaspoon vanilla extract
– 3 ripe bananas, mashed
– 1/2 cup (120ml) sour cream or yogurt
– 1/2 cup (60g) chopped nuts (optional)

Instructions:


1. Preheat Oven: Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or 9-inch round cake pan.
2. Mix Dry Ingredients: Whisk together flour, baking powder, baking soda, and salt.
3. Cream Butter & Sugar: Cream together butter and sugar until light and fluffy.
4. Add Eggs & Vanilla: Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
5. Mix in Bananas: Mix in mashed bananas until well combined.
6. Combine Wet & Dry Ingredients: Gradually add dry ingredients to wet mixture, alternating with sour cream or yogurt.
7. Add Nuts (Optional): Fold in chopped nuts if using.
8. Bake: Pour batter into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean.
9. Cool: Let cake cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
