Ingredients

  • 2 lb pork loin
  • Salt, to taste
  • Black pepper, to taste
  • 1 can (12 oz) Coca-Cola
  • 1/4 cup brown sugar
  • 1/4 cup soy sauce
  • 2 tablespoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 350°F (175°C). Season the pork loin evenly with salt and black pepper.
  2. In a medium bowl, whisk together Coca-Cola, brown sugar, soy sauce, Dijon mustard, apple cider vinegar, garlic powder, and onion powder until well combined.
  3. Place the pork loin in a roasting pan and pour the glaze evenly over the top.
  4. Roast for 1½ to 2 hours, basting occasionally with the pan sauce, until the pork is tender and caramelized. The internal temperature should reach 145°F.
  5. Remove from the oven and let the pork rest for 10 minutes before slicing.
  6. Drizzle with the thickened pan sauce and serve warm.
