Ingredients

For the cake

  • 1 cup plain or vanilla yogurt
  • 1½ cups all-purpose flour
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup mixed fruit, chopped (berries, mango, pineapple, apple, peaches)
  • 1 tablespoon all-purpose flour (for tossing the fruit)

Optional glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons yogurt or milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 175°C (350°F). Grease and line a 20–22 cm (8–9 inch) cake pan.
  2. Toss the chopped mixed fruit with 1 tablespoon of flour to prevent sinking. Set aside.
  3. In a bowl, whisk together yogurt, sugar, eggs, vegetable oil, and vanilla until smooth.
  4. Add flour, baking powder, baking soda, and salt. Mix gently until just combined.
  5. Fold in the floured fruit carefully.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for 35–45 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool completely.
  9. If using the glaze, mix powdered sugar, yogurt (or milk), and vanilla until smooth and drizzle over the cooled cake.
