Ingredients

Custard Base

  • ¼ cup pumpkin puree
  • 2 tablespoons packed brown sugar
  • 2 large eggs
  • ¼ cup whole milk
  • ½ teaspoon ground cinnamon
  • 1 teaspoon pumpkin pie spice
  • ¼ teaspoon vanilla extract

Bread

  • 8 slices Texas toast, challah, or French bread

Cooking Fat

  • ¼ cup unsalted butter, divided

Optional Toppings

  • Maple syrup
  • Whipped cream
  • Powdered sugar
  • Chopped pecans

Instructions

  1. Prepare Custard
    In a shallow dish, whisk eggs, milk, pumpkin puree, vanilla, cinnamon, pumpkin pie spice, and brown sugar until smooth.
  2. Heat Skillet
    Melt 1½ tablespoons butter in a large nonstick skillet over medium heat.
  3. Dip Bread
    Coat each slice of bread in custard mixture, letting excess drip off.
  4. Cook
    Place bread in skillet, cooking 2–3 minutes per side until golden brown. Work in batches, adding butter as needed.
  5. Serve
    Serve warm with toppings such as maple syrup, whipped cream, pecans, or powdered sugar.

Notes

  • Use day-old bread for best texture: it holds custard well and creates a crisp outside.
