Ingredients
- 2 boneless, skinless chicken breasts
- Zest of 1 large lemon
- 2 teaspoons minced garlic
- 1/3 cup olive oil
- 3/4 teaspoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon black pepper
- Juice of 1–2 lemons
- 3 tablespoons chopped fresh parsley
- 3/4 cup all-purpose flour
- 2 large eggs
- 1 tablespoon water
- 1 cup crispy breadcrumbs
- 1/3 cup grated Parmesan cheese
- 4 tablespoons butter
- 2 tablespoons olive oil (for cooking)
Instructions
- Slice each chicken breast horizontally and then cut into thin cutlets.
- In a bowl, mix lemon zest, garlic, olive oil, oregano, salt, and black pepper. Add the chicken and marinate for 45–60 minutes.
- Add lemon juice and chopped parsley to the remaining marinade to create a sauce. Set aside.
- Prepare three bowls: one with flour, one with beaten eggs mixed with water, and one with breadcrumbs mixed with Parmesan cheese.
- Coat each piece of chicken in flour, dip in the egg mixture, then coat in the breadcrumb mixture.
- Heat butter and olive oil in a skillet over medium heat. Fry the chicken until golden and crispy on both sides.
- Transfer the chicken to the oven and bake until fully cooked through.
- Serve hot with the lemon parsley sauce drizzled over the top.
