Ingredients

For the Meatloaf:

  • 2 pounds ground beef
  • 2 large eggs, beaten
  • ¾ cup milk
  • 1 cup breadcrumbs
  • ½ cup finely chopped onion
  • ½ cup finely chopped green bell pepper
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder

For the Glaze:

  • ½ cup ketchup
  • ¼ cup brown sugar
  • 1 tablespoon yellow mustard

Instructions

Step 1: Preheat the Oven
Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and set aside.

Step 2: Mix the Meatloaf
In a large bowl, combine ground beef, eggs, milk, breadcrumbs, onion, green pepper, Worcestershire sauce, salt, black pepper, and garlic powder. Mix gently with your hands until just combined — don’t overmix.

Step 3: Shape & Bake
Transfer the mixture into the prepared pan and press down lightly to form a loaf.

Step 4: Prepare the Glaze
Whisk together ketchup, brown sugar, and mustard. Spread evenly over the top of the loaf.

Step 5: Bake
Bake uncovered for 1 hour, or until internal temperature reaches 160°F (71°C). Let rest 10 minutes before slicing.

Cook Notes & Tips

  • Breadcrumbs: Swap for crushed saltines for a softer loaf.
  • Milk Substitution: Whole, skim, or even non-dairy works.
  • Mixing Tip: Gentle mixing keeps the texture tender.
  • Resting: Don’t skip — it keeps juices inside the meatloaf.
