Braised Tomato Chicken with Burrata

This dish is the perfect blend of cozy and elegant: juicy chicken thighs braised in a garlicky tomato sauce, finished with creamy burrata and fresh herbs. Serve it with crusty bread or over pasta for a meal that feels straight from the Italian countryside!

Ingredients:

  • 4 bone-in, skin-on chicken thighs
  • Salt and black pepper, to taste
  • 1 tbsp olive oil
  • 3–4 garlic cloves, minced
  • 1 can (14 oz / 400 g) crushed tomatoes
  • 1/2 tsp red pepper flakes (optional)
  • 1 tsp Italian seasoning or dried oregano
  • 1 tsp sugar (optional, to balance acidity)
  • 1 ball fresh burrata
  • Fresh basil or parsley, for garnish

Directions:

  1. Sear the chicken: Pat the chicken thighs dry and season with salt and pepper. Heat olive oil in a deep skillet or braiser over medium-high heat. Sear the chicken skin-side down until golden and crisp, about 5–6 minutes. Flip and cook another 2 minutes. Remove and set aside.
  2. Build the sauce: In the same pan, lower the heat and sauté the minced garlic for 30 seconds. Add the crushed tomatoes, red pepper flakes, Italian seasoning, and sugar if using. Stir well and bring to a simmer.
  3. Braise the chicken: Return the chicken thighs to the pan, skin-side up. Spoon a little sauce over the top, cover, and let simmer on low heat for 25–30 minutes until the chicken is fully cooked and tender.
  4. Finish with burrata: Once done, remove from heat. Tear the burrata and place it over the chicken and tomato sauce. Let it melt slightly into the hot dish.
  5. Serve: Garnish with fresh herbs and serve hot with toasted bread, pasta, or a side salad.

Tips:

  • For extra richness, stir a tablespoon of butter into the sauce before serving.
  • You can swap chicken thighs for boneless breasts or use chickpeas for a vegetarian version.
