Butterscotch Marshmallow Bars

Ingredients:

  • ¼ cup butter
  • ½ cup peanut butter
  • 1 cup butterscotch chips
  • 250g bag colored mini marshmallows

Instructions:

  1. Melt the butter and peanut butter together over LOW heat, stirring constantly. Add the butterscotch chips and continue stirring until melted.
  2. If the mixture is too hot, allow it to cool for about 10 minutes. (If your pots have thick bottoms, you might not need to cool it, but if not, cooling is essential. Do not add marshmallows to a hot mixture, or they’ll sink to the bottom and leave the marshmallows floating on top.)
  3. Once cooled, stir in the marshmallows, making sure they are evenly coated with the butterscotch mixture.
  4. Press the mixture into an 8×8-inch pan lined with parchment paper.
  5. Refrigerate until set and then cut into squares.

Note: I often double the recipe and use a 9×13-inch pan, but I reduce the marshmallows to one and a half bags, as we like it that way!

For a 9×13 pan, you’ll need:

  • ½ cup butter
  • 1 cup peanut butter
  • 2 cups butterscotch chips
  • 375 grams colored mini marshmallows
