Chocolate Pecan Ooey Gooey Butter Cake

Ingredients

For the Crust:

  • 1 box (15.25 oz) chocolate cake mix
  • 1/2 cup unsalted butter, melted
  • 1 large egg

For the Filling:

  • 8 oz cream cheese, softened
  • 2 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 1/2 cup unsalted butter, melted
  • 4 cups confectioners’ sugar
  • 1 cup pecans, chopped

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 9×13-inch baking dish to ensure the cake doesn’t stick.
  2. Prepare the Crust:
    • In a large mixing bowl, combine the chocolate cake mix, melted butter, and egg.
    • Mix until fully incorporated and press the mixture evenly into the baking dish to form the crust layer.
  3. Create the Filling:
    • Beat cream cheese until smooth. Add eggs, cocoa powder, and vanilla extract; mix well.
    • Pour in melted butter and blend. Gradually add confectioners’ sugar and stir until creamy.
    • Fold in chopped pecans.
  4. Assemble the Cake: Pour the filling over the crust and spread it evenly.
  5. Bake: Place in the oven and bake for 40-45 minutes. The edges should be set, but the center remains gooey. Avoid overbaking.
  6. Cool: Remove from oven and let the cake cool completely before cutting.
  7. Serve and Enjoy: Cut into squares and serve at room temperature or chilled.
