Ingredients:
- 3 large eggs
- 1 tablespoon olive oil
- 1 cup shredded cheese (mild or medium)
- Salt (to taste)
- 1 prepared quiche or pie crust (10–11 inch)
- ¾ cup sour cream
- Black pepper (to taste)
- 1 teaspoon Italian-style dried herbs
- 1½ pounds mixed vegetables (broccoli florets, sliced tomatoes, red onion, peas, corn)
Instructions:
- Preheat the oven to 350°F (175°C). Lightly grease a 10–11 inch quiche pan and press the crust evenly into the pan.
- Bring a pot of salted water to a boil. Add broccoli florets and cook for about 3 minutes until tender-crisp. Drain well.
- Heat olive oil in a skillet over medium heat and sauté the sliced red onion for 2–3 minutes until softened.
- In a bowl, whisk together eggs, sour cream, shredded cheese, Italian herbs, salt, and black pepper until smooth.
- Spread all prepared vegetables evenly over the crust and lightly season with salt and pepper.
- Pour the egg mixture evenly over the vegetables.
- Bake for 35–40 minutes, until the center is set and the top is lightly golden.
