Creamy Chicken Sausage & Pepper Skillet

Ingredients

  • 2 teaspoons olive oil
  • 4–6 chicken sausages
  • 2 tablespoons butter
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 3 garlic cloves, sliced
  • 1½ cups sliced mushrooms
  • 1 teaspoon tomato paste
  • 1 teaspoon Dijon mustard
  • ½ tablespoon smoked paprika
  • Salt, to taste
  • Black pepper, to taste
  • 1½ cups low-sodium chicken broth, divided
  • 2 tablespoons sour cream
  • Chopped parsley, dill, or tarragon

Instructions

  1. Heat 1 teaspoon olive oil in a large skillet over medium heat. Add the sausages and cook until browned on all sides. Remove and set aside.
  2. Add the remaining olive oil and butter to the skillet. Stir in the onion, bell pepper, garlic, and mushrooms. Cook for about 8 minutes, until softened and lightly golden.
  3. Stir in the tomato paste, Dijon mustard, smoked paprika, salt, and black pepper.
  4. Pour in ½ cup of the chicken broth and let simmer for 2–3 minutes.
  5. Return the sausages to the skillet and add the remaining broth. Simmer for about 15 minutes, until the sausages are cooked through and the sauce slightly thickens.
  6. Remove from heat and stir in the sour cream and fresh herbs.
  7. Serve warm with potatoes, rice, or crusty bread.
