Crimson Velvet Cheesecake Fantasy

Ingredients

Cheesecake Layer:

  • 2 (8 oz.) packages cream cheese, softened
  • 2/3 cup sugar
  • 2 large eggs
  • 1/3 cup sour cream
  • 1 tablespoon flour
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt

Whipped Layer:

  • 2 cups heavy cream
  • 4 tablespoons powdered sugar
  • 2 teaspoons vanilla

Red Velvet Layer:

  • Butter (for greasing the cake pan)
  • Flour (for dusting the cake pan)
  • 1 box red velvet cake mix (plus the ingredients required on the box)

Instructions

To make the Red Velvet Cake Layer:

  1. Preheat oven to 350°F (175°C).
  2. Grease a 9″ springform pan with butter and dust with flour.
  3. Prepare the red velvet cake batter according to the box instructions.
  4. Pour the batter into the prepared pan and bake for 30–32 minutes.
  5. Let the cake cool slightly in the pan, then remove and level the top using a cake leveler. Set aside.

To make the Cheesecake Layer:

  1. In a large bowl or stand mixer, beat softened cream cheese and sugar until light and fluffy (about 3 minutes).
  2. Add eggs one at a time, beating until fully combined.
  3. Mix in sour cream, flour, vanilla, and salt until smooth.
  4. Line a separate 9″ springform pan with parchment paper and pour in the cheesecake batter.
  5. Bake for 1 hour, or until just slightly jiggly in the center.
  6. Let cool slightly, then freeze until completely firm. Level if needed before assembling.

Alternate Method: If you’d like to bake the layers together, first bake the red velvet cake, then add the cheesecake layer on top and bake again until set. Freeze until firm.

To make the Whipped Frosting:

  1. In a bowl, combine heavy cream, powdered sugar, and vanilla.
  2. Whisk by hand using a balloon whisk for about 5 minutes until soft peaks form. (Do not over-whisk.)

To assemble the cake:

  1. Place the firm cheesecake layer on top of the red velvet cake.
  2. Spread the whipped cream evenly over the cheesecake layer.
  3. Use a piping tip to create decorative whipped dollops around the edge.
  4. Garnish with red velvet cake crumbs.
