Ingredients:

  • 1 tablespoon mustard
  • 12 egg roll wrappers
  • 1/4 cup diced onions
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced pickles
  • Cooking spray or oil for misting
  • 1/4 cup ketchup
  • 1 pound ground beef
  • Salt and pepper to taste

Directions:

  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  2. Stir in the cheddar cheese, pickles, onions, ketchup, mustard, salt, and pepper. Mix until combined.
  3. Lay an egg roll wrapper on a flat surface, place 2 tablespoons of the mixture in the center, and fold the wrapper according to package directions.
  4. Repeat for all wrappers, placing finished rolls seam side down.
  5. Preheat the air fryer to 380°F (190°C).
  6. Lightly spray the egg rolls with cooking spray.
  7. Place egg rolls in the air fryer basket in a single layer, ensuring not to overcrowd.
  8. Cook for 10-12 minutes, flipping halfway through, until golden brown.
  9. Serve warm with additional ketchup and mustard for dipping.
