Crispy Air Fryer Zucchini Fries

Ingredients

  • 1 cup panko breadcrumbs
  • 2 medium zucchini
  • 1 tablespoon milk or heavy cream
  • ¾ teaspoon garlic powder
  • 1 ½ teaspoons dried basil
  • 1 teaspoon dried oregano
  • 2 large eggs
  • ½ cup all-purpose flour
  • ¾ teaspoon salt
  • ⅓ cup grated parmesan cheese
  • Olive oil spray

Instructions

  1. Trim off the ends of each zucchini, then cut them in half. Slice each of those halves into fries.
  2. Put the flour in one small shallow bowl. Beat the eggs and milk together in a separate shallow bowl.
  3. Add the breadcrumbs, parmesan, salt, garlic powder, dried basil, and dried oregano to a third shallow bowl and mix well.
  4. Set up an assembly line of bowls with the flour, then the egg wash, then the breadcrumb mixture. Coat each zucchini fry in the flour, then dip it into the egg wash, ensuring it’s completely coated. Allow any excess egg wash to drip off before coating it in the breadcrumb mixture.
  5. If your air fryer model requires it, preheat it to 400°F.
  6. Working in batches, place the zucchini fries in a single layer in the basket, making sure they aren’t overlapping or touching.
  7. Lightly spray the zucchini fries with olive oil. Air-fry at 400°F for 7-9 minutes until golden and crisp. You may need to do this in 2-3 batches.
  8. Serve the zucchini fries warm with marinara sauce for dipping.
