Ingredients
- 1 ½ cups (360ml) milk
- 1 cup (125g) all-purpose flour
- 1 tablespoon (15g) sugar (optional, for sweet crepes)
- 2 large eggs
- 2 tablespoons (30g) unsalted butter, melted
- 1 pinch of salt
- 1 teaspoon vanilla extract (optional for sweet crepes)
- Butter or neutral oil for greasing the pan
Instructions:
- Prepare the Batter:
- In a large bowl, whisk the flour and salt together.
- In another bowl, beat the eggs, milk, and vanilla extract (if using).
- Gradually add the wet ingredients to the dry ingredients, whisking constantly to avoid lumps.
- Stir in the melted butter and mix well.
- Let the batter rest for at least 30 minutes to relax the gluten for tender crepes.
- Cook the Crepes:
- Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with butter or oil.
- Pour ¼ cup of batter into the pan, swirling quickly to coat the bottom evenly.
- Cook for 1-2 minutes, or until the edges lift and the bottom turns lightly golden.
- Flip and cook for about 30 seconds on the other side. Remove and repeat with the remaining batter.
- Fill and Serve:
- Sweet Crepes: Fill with Nutella, fresh fruits, whipped cream, or jam.
- Savory Crepes: Fill with ham, cheese, spinach, or mushrooms.
