Ingredients:
Blueberry Filling:

  • 4 cups blueberries
  • 1 teaspoon lemon zest
  • ½ cup granulated sugar
  • 1 teaspoon corn starch

Biscuit Topping:

  • 1½ cups all-purpose flour
  • ½ cup granulated sugar
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 5 tablespoons unsalted butter
  • ¾ cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons sanding sugar

Instructions:

  1. Preheat oven to 375°F. Spray an 8-inch or 9-inch baking dish with nonstick cooking spray.
  2. Combine blueberries, granulated sugar, lemon zest, and corn starch in a large bowl. Pour into prepared baking dish.
  3. Whisk together flour, granulated sugar, baking powder, and salt. Cut in butter until pea-sized pieces remain.
  4. Stir in cream and vanilla extract. Scoop out biscuits and place on top of blueberries.
  5. Brush with heavy cream and sprinkle with sanding sugar. Bake for 30-40 minutes or until golden brown.
