Frito-Topped Taco Casserole

Ingredients:

  • 1 bag (9.25 oz) Fritos corn chips, divided
  • 2 cups shredded Mexican blend cheese, divided
  • 1 pound lean ground beef
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 small onion, diced
  • 1 packet taco seasoning mix
  • 1 can (10 oz) enchilada sauce
  • 2/3 cup water
  • 1 green onion, chopped
  • Sour cream for garnish
  • Prepared guacamole for garnish

Instructions:

  1. Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish with non-stick cooking spray.
  2. In a large skillet, cook the ground beef and diced onions over medium heat until the beef is browned. Drain any excess fat.
  3. Stir in the taco seasoning mix and water, and simmer for 3-4 minutes, stirring frequently.
  4. Mix in the enchilada sauce and pinto beans.
  5. Layer 4 cups of Fritos in the bottom of the prepared baking dish. Sprinkle with 1 cup of shredded cheese.
  6. Spread the beef mixture evenly over the Fritos and top with the remaining cheese.
  7. Bake for 18-20 minutes, or until hot and bubbly. Sprinkle the remaining Fritos on top and let cool slightly.
  8. Garnish with chopped green onions, sour cream, and guacamole.
