Ingredients:

For the steak bites:

  • 1 lb beef steak (sirloin or ribeye work well), cut into small cubes
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Salt and black pepper, to taste

For the pasta:

  • 1 lb pasta shells (or your favorite short pasta)
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the pasta:
Bring a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Sear the steak bites:
Pat the steak cubes dry with paper towels. Season with salt and pepper. In a large skillet over medium-high heat, melt 2 tbsp of butter. Add steak cubes in a single layer (in batches if needed) and sear for 2–3 minutes per side until nicely browned. Remove and set aside.
  3. Make the garlic butter sauce:
In the same skillet, reduce heat to medium. Add remaining 2 tbsp butter and garlic. Sauté for 30 seconds until fragrant (don’t let it burn!).
  4. Build the creamy pasta:
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and cook until melted and smooth. Add cooked pasta to the sauce and stir until fully coated.
  5. Combine & finish:
Add the steak bites back to the pan and stir gently to combine everything. Simmer for 2 minutes to heat through.
  6. Garnish & serve:
Sprinkle chopped parsley on top before serving. Serve hot and enjoy the richness!
