For the Cookies:

  • 2 ½ cups (315 g) all-purpose flour
  • ¾ cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp almond extract (optional)
  • ½ tsp salt

For the Royal Icing:

  • 3 cups (375 g) powdered sugar, sifted
  • 2 large egg whites or 4 tbsp meringue powder + 6 tbsp water
  • ½ tsp vanilla or almond extract
  • Food coloring: red, green, and black
  • Edible glitter (optional)

1. Make the Cookie Dough:

  • Whisk flour and salt in a medium bowl.
  • In a separate large bowl, cream butter and sugar until light and fluffy.
  • Beat in egg, vanilla, and almond extract (if using).
  • Gradually add dry ingredients, mixing until a soft dough forms.
  • Divide dough into two disks, wrap in plastic wrap, and chill for at least 1 hour.

2. Shape and Bake the Cookies:

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Roll dough to ¼ inch (6 mm) thickness on a floured surface.
  • Cut out scalloped-edge shapes and place them on baking sheets.
  • Bake for 10-12 minutes, or until edges are lightly golden.
  • Cool cookies completely on a wire rack.

3. Prepare the Royal Icing:

  • Beat egg whites or meringue powder mixture until frothy.
  • Gradually add powdered sugar and mix until stiff peaks form.
  • Divide icing into separate bowls and tint white, red, green, and black with food coloring.

4. Decorate the Cookies:

  • Flood each cookie with white icing as the base and let dry completely (4-6 hours or overnight).
  • Use green icing with a fine piping tip to create holly leaves, black icing for branches, and red icing for berries.
