Ingredients:
• 4 large baked potatoes, peeled and cubed
• 2 cups cooked chicken breast, diced or shredded
• 1 cup sour cream
• 1 cup shredded cheddar cheese
• 1/2 cup mozzarella cheese
• 1/2 teaspoon garlic powder
• 1/2 teaspoon onion powder
• Salt and black pepper, to taste
• 3 green onions, chopped (plus more for garnish)
• 1/2 cup cooked turkey bacon or beef bacon, crumbled (optional)
• Olive oil or nonstick spray (for greasing)
Directions:
- Preheat the oven:
Set your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil or nonstick spray. - Prepare the mixture:
In a large mixing bowl, combine the cubed baked potatoes, cooked chicken, sour cream, cheddar cheese, mozzarella, garlic powder, onion powder, salt, pepper, and green onions. If using turkey or beef bacon, mix in half now and reserve the rest for topping. - Assemble the casserole:
Pour the potato and chicken mixture into the prepared baking dish. Spread it out evenly and sprinkle the remaining bacon and a little extra cheese on top if desired. - Bake:
Bake uncovered for 25–30 minutes, or until everything is heated through and the top is golden and bubbly. - Garnish and serve:
Let the casserole rest for a few minutes before serving. Top with additional green onions or a dollop of sour cream if you like.
