Ingredients

For the Choux Pastry:

  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs

For the Filling:

  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Chocolate Glaze (optional):

  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons unsalted butter
  • 2 tablespoons milk

Directions

Prepare the Choux Pastry
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a medium saucepan, combine the water, butter, and salt. Bring to a boil over medium heat. Once boiling, remove the pan from the heat and add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides of the pan.

Return the pan to the stove and cook the dough over low heat for about 2 minutes, stirring constantly to dry out the dough slightly. Remove from the heat and let it cool for a few minutes.

Add the eggs one at a time, beating well after each addition until the dough is smooth and shiny. The dough should be thick and able to hold its shape.

Shape and Bake the Pastry
Drop the dough by rounded tablespoonfuls onto the prepared baking sheet, spacing them about 2 inches apart. Use a wet finger to smooth any peaks in the dough.

Bake in the preheated oven for 20-25 minutes, or until the cream puffs are golden brown and puffed. Do not open the oven door during baking, as this can cause the puffs to deflate.

Once baked, remove the puffs from the oven and immediately cut a small slit in the side of each puff to release steam. Let them cool completely on a wire rack.

Prepare the Cream Filling
In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. This will create a light and fluffy filling that complements the crisp pastry shells.

Fill the Cream Puffs
Once the cream puffs are completely cooled, slice them in half horizontally. Spoon or pipe the whipped cream into the bottom halves of the puffs, then place the top halves back on.

Optional: Add the Chocolate Glaze
If you’d like to add a chocolate glaze, melt the chocolate chips, butter, and milk together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle the glaze over the filled cream puffs or dip the tops of the puffs into the glaze.

Serve and Enjoy
These cream puffs are best enjoyed the same day they are made, as the pastry will be at its crispiest. Serve them as a delightful dessert at the end of a meal, or as an impressive treat for any occasion.

Tips

  • Pastry Dough Consistency: The dough should be smooth and thick, but not too stiff. If it’s too thick, you can add an extra egg to loosen it slightly.
  • Filling Variations: Feel free to get creative with the filling! You can use pastry cream, custard, or even a flavored whipped cream to change things up.
  • Storage: If you need to make them ahead of time, store the unfilled puffs in an airtight container at room temperature for up to 2 days. Fill them just before serving for the best texture.
  • Freezing: The unfilled cream puffs can also be frozen. Just thaw them at room temperature and crisp them in the oven for a few minutes before filling.

Mom’s Famous Cream Puffs are a classic dessert that never goes out of style. Light, airy, and filled with creamy goodness, they’re a perfect way to end any meal on a high note. Enjoy!
