Ingredients:

  • ½ cup small pickles (like cornichons or dill pickles)
  • ¼ cup olive oil
  • 8 oz block of pepper jack cheese
  • Salt and pepper, to taste
  • ½ tsp garlic powder
  • Fresh herbs (parsley or basil), for garnish
  • 8 oz block of sharp cheddar cheese
  • ¼ cup white wine vinegar or apple cider vinegar
  • 1 tsp dried Italian seasoning
  • ½ cup sliced salami

Instructions:

  1. Prep the ingredients:
    Cut cheddar and pepper jack cheese into bite-sized cubes. Add to a medium bowl. Slice salami into small pieces and chop pickles if needed. Add to the bowl with cheese.
  2. Make the marinade:
    In a small bowl, whisk together olive oil, vinegar, Italian seasoning, garlic powder, salt, and pepper until well combined.
  3. Marinate:
    Pour marinade over cheese, salami, and pickles. Stir gently to coat evenly. Cover and refrigerate for at least 2 hours (or overnight for stronger flavor).
  4. Serve:
    Garnish with chopped fresh herbs. Serve chilled with crackers or crusty bread as a flavorful appetizer.
