Spinach Artichoke Stuffed Baguette Bites

Ingredients

  • 3 tablespoons butter
  • 1 baguette
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1½ cups shredded mozzarella cheese
  • Salt and black pepper, to taste
  • 3 garlic cloves, minced
  • 8 oz cream cheese
  • 3 green onions, sliced
  • 1 cup finely diced mushrooms
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • Grated Parmesan cheese
  • 1 bag (10 oz) baby spinach
  • Fresh basil or parsley, torn

Instructions

  1. Cut the baguette into four sections and hollow each piece.
  2. Warm olive oil and cook mushrooms, then add artichokes and wilt spinach.
  3. Stir in cheeses, green onions, salt, and pepper until smooth.
  4. Fill baguette sections and slice into 1-inch pieces.
  5. Melt butter with garlic and brush over the slices.
  6. Wrap loosely in foil and bake 15 minutes, then uncover and bake 5 more.
  7. Top with Parmesan and herbs; serve warm.
