Strawberry Cheesecake Donut Bites

Ingredients:

For the Donut Dough:

  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup milk
  • 2 tablespoons melted butter
  • 1 egg
  • 1 teaspoon vanilla extract
  • Oil, for frying

For the Strawberry Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 2 tablespoons powdered sugar
  • 3 tablespoons strawberry jam or preserves

For the Coating:

  • 1/2 cup granulated sugar
  • 1 teaspoon ground cinnamon (optional)

Directions:

  1. Make the Filling:
    In a small bowl, mix cream cheese, powdered sugar, and strawberry jam until smooth. Transfer to a piping bag or small zip-top bag and refrigerate while you prepare the dough.
  2. Prepare the Dough:
    In a mixing bowl, combine flour, sugar, baking powder, and salt. In another bowl, whisk together milk, melted butter, egg, and vanilla extract. Pour wet ingredients into dry and stir until a sticky dough forms.
  3. Shape and Fry:
    Heat oil in a deep pot to 350°F (175°C). Scoop tablespoon-sized portions of dough and carefully drop into the oil in batches. Fry 2–3 minutes per side, or until golden brown and cooked through. Transfer to a paper towel-lined tray.
  4. Fill the Donut Holes:
    Once slightly cooled, use a skewer or small knife to poke a hole in each donut. Fill each one with the chilled strawberry cheesecake mixture using a piping bag.
  5. Coat in Sugar:
    Roll the filled donut holes in granulated sugar (or cinnamon sugar if desired) while still warm for a perfect sweet finish.
  6. Serve and Enjoy:
    Best enjoyed the same day—crispy on the outside, creamy and fruity on the inside!
