Ingredients:

  • 1 teaspoon smoked paprika
  • 2 medium sweet potatoes, peeled and diced
  • 1/3 cup dried cranberries
  • 1 cup broccoli florets
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 4 cups baby arugula
  • 2 tablespoons balsamic glaze
  • 1 can (15 oz) chickpeas, drained and rinsed

Instructions:

  1. Preheat your oven to 400°F (200°C). Toss the sweet potatoes and broccoli with olive oil, smoked paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender and golden.
  2. While the vegetables roast, heat 1 teaspoon olive oil in a skillet over medium heat. Sauté the chickpeas with a pinch of smoked paprika for 3-5 minutes until lightly crisp.
  3. In a large bowl, combine roasted vegetables, chickpeas, arugula, and dried cranberries. Drizzle with balsamic glaze and gently toss to coat.
  4. Divide into bowls or plates and enjoy immediately while warm.
