Ingredients:
- ½ cup sour cream or plain Greek yogurt
- 1 teaspoon vanilla extract
- 1 ½ cups granulated sugar
- ½ cup unsweetened cocoa powder
- 4 large eggs, room temperature
- ¼ teaspoon salt
- ½ cup semi-sweet chocolate chips (optional)
- 1 cup all-purpose flour
- ½ teaspoon baking powder
- 1 cup unsalted butter, softened
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
- In a large bowl, beat the butter and sugar until light and fluffy, about 3–5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream, beginning and ending with the dry ingredients. Mix just until combined.
- Fold in the chocolate chips if using.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55–65 minutes, until a toothpick inserted comes out clean or with a few moist crumbs.
- Let cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.
