- 1 3/4 cups (220g) all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper (optional, for a bit of heat)
- 1/4 cup (60ml) olive oil
- 1/2 cup (120ml) buttermilk
- 1 large egg
- 1 1/2 cups (180g) grated zucchini (about 1 medium zucchini)
- 1 1/4 cups (150g) grated cheddar cheese
- 1/4 cup (25g) grated Parmesan cheese
- 2 tablespoons chopped fresh chives (optional)
Directions:
Preheat your oven to 350°F (180°C) and line a 12-cup muffin tin with paper liners, or lightly grease the cups. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, garlic powder, and cayenne pepper (if using).
In a separate bowl, whisk together the olive oil, buttermilk, and egg until well combined. Add the wet ingredients to the dry ingredients and gently fold together until just combined.
Be careful not to overmix. Fold in the grated zucchini, cheddar cheese, Parmesan cheese, and chives (if using) until evenly distributed throughout the batter.
