Ingredients:
• 2 tbsp butter (softened)
• 1/2 cup diced tomatoes (seeded to avoid sogginess)
• 8 slices of bread (white, whole wheat, or sourdough)
• 1 cup grated mozzarella or cheddar cheese (plus extra for topping)
• 1/4 tsp red chili flakes (optional)
• 1/4 cup chopped fresh parsley or cilantro
• 1/2 cup diced bell peppers (red, green, or yellow)
• Salt and pepper, to taste
• 2 green onions, finely sliced
• 1/2 tsp garlic powder (optional)

Instructions:

  1. Preheat Your Cooking Tool:
    Preheat the oven to 375°F (190°C), or heat a grill pan on the stovetop.
  2. Make the Topping:
    In a mixing bowl, combine diced bell peppers, tomatoes, parsley, green onions, and 1 cup of cheese. Add garlic powder, chili flakes (if using), salt, and pepper, mixing well.
  3. Assemble the Sandwich Layers:
    Butter one side of each bread slice. Arrange 4 slices, butter-side down, on a baking tray or grill pan. Spread a generous portion of the vegetable-cheese mixture on the unbuttered side of each slice. Cover with another bread slice, buttered side up.
  4. Add a Cheesy Crust:
    Sprinkle extra cheese and a small amount of the vegetable mixture on top of each sandwich for added flavor.
  5. Cook to Perfection:
    • For the Oven: Bake the sandwiches for 10-12 minutes, or until the cheese melts and the bread turns golden.
    • For the Stovetop: Grill each sandwich over medium heat, pressing lightly with a spatula. Cook 3-4 minutes on each side until golden and crispy.
  6. Serve Hot:
    Slice the sandwiches in half and serve warm with ketchup or your favorite dip.
