Overnight Banana French Toast Casserole is a rich, indulgent breakfast dish that brings together the comforting flavors of ripe bananas, warm spices, and custardy French bread. Prepared the night before, it’s the perfect solution for a stress-free morning meal that everyone will love.

Ingredients:

  • 1 loaf French bread, cut into 1-inch cubes
  • 4 ripe bananas, sliced
  • 8 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Pinch of salt
  • 1/2 cup chopped pecans or walnuts (optional)
  • Maple syrup and powdered sugar for serving

Instructions:

Grease a 9×13-inch baking dish with butter or non-stick spray, ensuring even coverage. Arrange the French bread cubes in the dish, spreading them out evenly. Layer the sliced bananas on top of the bread, ensuring they are well distributed.

In a large mixing bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, brown sugar, vanilla extract, ground cinnamon, nutmeg, and a pinch of salt until fully combined. Pour this custard mixture over the bread and bananas, pressing down lightly so the bread absorbs the custard. If you like a bit of crunch, sprinkle chopped pecans or walnuts over the top.

Cover the baking dish with plastic wrap or aluminum foil and refrigerate overnight, allowing the bread to soak up the custard and the flavors to meld together.

The next morning, preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and let it sit at room temperature for about 20 minutes. Bake the casserole uncovered for 45-55 minutes, or until the top is golden brown and the custard has set.

Allow the casserole to cool for a few minutes before serving. Top with a drizzle of maple syrup and a dusting of powdered sugar for an extra touch of sweetness. Enjoy this delicious, make-ahead breakfast with family and friends!

Tips:

  • Bread Choice: If you prefer a different texture, you can use brioche or challah bread instead of French bread for a richer, softer casserole.
  • Banana Variations: For added flavor, try caramelizing the banana slices in a bit of butter and brown sugar before layering them over the bread.
  • Serving Suggestions: This casserole pairs wonderfully with fresh berries, whipped cream, or a dollop of Greek yogurt on the side.
