For the Cherry Filling:
- 2 cans (21 oz each) cherry pie filling
- 1 tbsp sugar (optional, for sweetness)
- 1 tbsp cornstarch (for thickening)
- 1 tsp lemon juice
- ¼ tsp almond extract
For the Glaze:
- 1 cup powdered sugar
- ½ tsp vanilla extract
- ½ tsp almond extract
- 2 tbsp milk
Instructions
1️⃣ Prepare the Crust:
Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking pan. In a large bowl, combine the flour, sugar, and salt. Add the softened butter, eggs, vanilla, and almond extract. Mix until the dough comes together. Press about two-thirds of the dough into the pan and bake for 15-20 minutes, or until golden brown.
2️⃣ Prepare the Cherry Filling:
In a saucepan, mix the cherry pie filling, sugar, cornstarch, lemon juice, and almond extract. Cook over medium heat, stirring until thickened. Let it cool for a few minutes.
3️⃣ Assemble the Bars:
Once the crust is baked, spread the cherry filling evenly over it. Crumble the remaining dough over the top to create a streusel-like topping. Bake for an additional 25-30 minutes, or until the topping is golden and the filling is bubbling.
