Ingredients

  • 8 oz lo mein noodles or spaghetti
  • 1 lb chicken breast, thinly sliced
  • 2 tablespoons soy sauce (divided)
  • 1 tablespoon oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 bell pepper, julienned
  • 2 carrots, julienned
  • 1 cup broccoli florets
  • 1/4 cup chicken broth
  • Green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Directions

Cook the Noodles
Begin by cooking the lo mein noodles or spaghetti according to the package instructions. Once al dente, drain the noodles and set them aside. Drizzle with a little sesame oil to prevent sticking and add extra flavor.

Prepare the Chicken
In a medium bowl, toss the thinly sliced chicken breast with 1 tablespoon of soy sauce. Let the chicken marinate for a few minutes while you prepare the vegetables. This helps to infuse the chicken with flavor before cooking.

Stir-Fry the Vegetables
Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and sauté for 2-3 minutes until it begins to soften. Next, add the minced garlic and cook for another minute, until fragrant. Toss in the julienned bell pepper, carrots, and broccoli florets, and stir-fry for 4-5 minutes until the vegetables are tender-crisp.

Cook the Chicken
Push the vegetables to the sides of the skillet, creating a space in the center. Add the marinated chicken to the center of the skillet and cook for 4-5 minutes, stirring occasionally, until the chicken is fully cooked and no longer pink.

Combine Everything
Reduce the heat to medium and add the cooked noodles to the skillet, tossing them with the chicken and vegetables. Pour in the remaining 1 tablespoon of soy sauce, oyster sauce, hoisin sauce, and chicken broth. Stir everything together until the noodles are evenly coated with the sauce and everything is heated through.

Garnish and Serve
Once everything is well combined, remove the skillet from the heat. Garnish the Chicken Lo Mein with sliced green onions and a sprinkle of sesame seeds if desired. Serve hot and enjoy a delicious, homemade takeout experience.

Tips

  • Noodle Options: If you can’t find lo mein noodles, spaghetti or linguine make great substitutes. For a healthier option, try using whole wheat or vegetable-based noodles.
  • Vegetable Variations: Feel free to customize the vegetables based on what you have on hand. Snow peas, snap peas, mushrooms, or bok choy would all be excellent additions.
  • Marinating the Chicken: For even more flavor, you can marinate the chicken in soy sauce, a splash of rice vinegar, and a pinch of sugar for at least 15 minutes before cooking.
  • Make Ahead: The components of this dish can be prepped in advance, making it a quick and easy meal to throw together on busy nights. Simply store the cooked noodles and sliced vegetables in the refrigerator until ready to use.

This Chicken Lo Mein is a quick, flavorful, and satisfying dish that brings the taste of takeout to your home kitchen. It’s perfect for those nights when you’re craving something delicious but want to skip the restaurant. Enjoy!
