1 1/2 cups powdered sugar
1 1/2 tablespoons lemon juice
1 1/2 tablespoons milk
2 tablespoons lemon zest
Directions
Preheat your oven to 350°F (175°C) and prepare baking sheets by covering them with parchment paper or silicone baking mats. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt, then set aside. In a large bowl, cream the butter and sugar together until the mixture becomes light and fluffy, which should take about five minutes using a stand or hand mixer on medium speed. Add the egg, lemon zest, lemon juice, and vanilla extract, mixing just until everything is incorporated.
