Ingredients
Cookie Dough Layer:
- 2 tbsp milk
- 1/4 cup packed brown sugar
- 1 tsp vanilla extract
- 1/2 cup unsalted butter, softened
- 1 cup all-purpose flour (heat-treated)
- 1/4 cup granulated sugar
- 1/2 cup mini chocolate chips (optional)
Cheesecake Layer:
- 1 cup granulated sugar
- 3 (8 oz) packages cream cheese, softened
- 1/2 cup heavy cream
- 1 cup sour cream
- 2 tbsp cornstarch
- 3 large eggs
- 1/4 cup all-purpose flour
- 1 tsp vanilla extract
- 1/4 tsp salt
Scarlet Sensation Sauce:
- 1 cup strawberries or raspberries (or mix)
- 1 tbsp lemon juice
- 1/4 cup sugar
- 1 tbsp cornstarch (optional, for thickening)
Instructions
Cookie Dough Layer
- Spread flour on a baking sheet and bake at 350°F (175°C) for 5–7 minutes until it reaches 165°F. Cool completely.
- Beat butter, brown sugar, and granulated sugar until fluffy.
- Mix in vanilla and milk.
- Add cooled flour and mix until a dough forms.
- Fold in chocolate chips if using.
- Press dough evenly into the bottom of a greased 9-inch springform pan. Refrigerate.
Cheesecake Layer
- Preheat oven to 325°F (163°C). Wrap the outside of the pan with foil.
- Beat cream cheese until smooth.
- Add sugar and vanilla, mixing well.
- Blend in sour cream and heavy cream.
- Mix in flour, cornstarch, and salt.
- Add eggs one at a time on low speed, mixing just until combined.
- Pour batter over the chilled cookie dough layer.
Bake
- Place pan in a larger roasting pan and add hot water halfway up the sides.
- Bake for 60–70 minutes, until edges are set and center slightly jiggles.
- Turn off oven, crack the door, and let cool inside for 1 hour.
- Remove, run a knife around edges, and refrigerate overnight.
Berry Sauce
- Simmer berries, sugar, and lemon juice for 5–7 minutes until broken down.
- For thicker sauce, stir in cornstarch mixed with 1 tbsp water and cook until thickened.
- Cool completely before serving.
