Ingredients:

  • 3 large green tomatoes (sliced 1/4 inch thick)
  • 1/2 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup breadcrumbs (Panko for extra crunch)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 large egg
  • 1/4 cup milk
  • Oil for frying (vegetable or canola oil)

For Serving:

  • Ranch dressing or remoulade sauce (optional)

Directions:

1️⃣ Prepare the Tomatoes:

  • Slice the green tomatoes into 1/4-inch thick slices.
  • Pat them dry with a paper towel to remove excess moisture.

2️⃣ Set Up the Breading Station:

  • In the first shallow dish, place the flour.
  • In the second dish, whisk together the egg and milk.
  • In the third dish, combine the cornmeal, breadcrumbs, salt, black pepper, garlic powder, and smoked paprika.

3️⃣ Bread the Tomatoes:

  • Dredge each tomato slice in the flour, coating both sides and shaking off the excess.
  • Dip it into the egg mixture, allowing any excess to drip off.
  • Finally, coat it in the cornmeal mixture, pressing gently to ensure even coverage.

4️⃣ Fry the Tomatoes:

  • Heat about 1/2 inch of oil in a skillet over medium heat until hot (about 350°F (175°C)).
  • Fry the tomatoes in batches for 2–3 minutes per side or until golden brown and crispy.
  • Remove with a slotted spoon and drain on paper towels.
