Ingredients:

  • 4 large russet potatoes, peeled and sliced thin
  • 1 large yellow onion, sliced
  • 3 tbsp vegetable oil or butter
  • Salt and black pepper, to taste
  • Optional: garlic powder or paprika for extra flavor
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Prep the potatoes: Peel the potatoes and slice them into thin rounds. Place them in a bowl of cold water to remove excess starch. Let them soak for about 10 minutes, then drain and pat completely dry with a kitchen towel.
  2. Heat the oil: In a large skillet over medium heat, add vegetable oil or butter. Once hot, add the sliced onions. Cook for about 5 minutes, stirring occasionally, until they begin to soften and turn golden.
  3. Add the potatoes: Spread the potato slices in an even layer in the pan with the onions. Let them cook undisturbed for about 5–6 minutes so they develop a crispy bottom.
  4. Stir and season: Flip the potatoes carefully with a spatula. Continue cooking, stirring every few minutes, until the potatoes are golden brown and tender — about 20–25 minutes total. Season with salt, pepper, and optional garlic powder or paprika.
  5. Garnish and serve: Sprinkle with fresh parsley just before serving. Enjoy them hot as a side dish for breakfast, lunch, or dinner!
