Ingredients:
- 1/3 cup freshly grated Parmesan cheese
- 6 medium potatoes (Yukon golds, red potatoes, or baby potatoes work great)
- 1/4 cup unsalted butter, melted
- 1 teaspoon garlic powder
- Freshly cracked black pepper, to taste
- 1/2 teaspoon paprika (optional)
- 1/2 teaspoon salt, plus more for sprinkling
- Chopped fresh parsley, for garnish (optional)
Directions:
Step 1: Preheat the Oven
Preheat your oven to 400°F (200°C). Prepare a baking dish or oven-safe skillet large enough to hold all the potatoes cut-side down, making sure they’re not too crowded to allow for crispy edges.
Step 2: Prepare the Parmesan Mixture
Pour the melted butter into the bottom of your baking dish. Sprinkle the freshly grated Parmesan cheese over the butter. Then add garlic powder, paprika, and salt. Mix it all together with a fork to create a buttery, cheesy paste. Spread it evenly in the dish.
Step 3: Prep the Potatoes
Slice the potatoes in half lengthwise. For baby potatoes, you can leave them whole or cut larger ones in half. Place the cut-side down on top of the Parmesan mixture and press gently to ensure they stick. Sprinkle a pinch of salt and pepper on top of the potatoes.
Step 4: Roast
Bake for 40 to 45 minutes, or until the potatoes are tender when pierced with a fork. The bottoms should be golden brown and crispy. If they need more time, bake for an additional 5 minutes or so.
