Ingredients:

  • 1 (15-ounce) can whole kernel corn, drained
  • 1 (15-ounce) can cream-style corn
  • 1 cup sour cream
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 1 (8.5-ounce) box Jiffy Corn Muffin Mix (or similar corn bread mix)
  • 1 cup shredded cheddar cheese (optional)
  • ½ teaspoon salt (optional)
  • ¼ teaspoon black pepper (optional)

Instructions:

  1. Preheat Oven: Preheat oven to 350°F (175°C). Grease a 9×9-inch or 9×13-inch baking dish.
  2. Mix Wet Ingredients: Combine corn, cream-style corn, sour cream, melted butter, and eggs. Stir until blended.
  3. Add Corn Muffin Mix: Add Jiffy Corn Muffin Mix and stir until just combined.
  4. Fold in Cheese (Optional): Gently fold in shredded cheddar cheese, if using.
  5. Pour into Baking Dish: Pour mixture into prepared baking dish. Spread evenly.
  6. Bake: Bake for 45–55 minutes, or until top is golden brown and center is set.
  7. Cool & Serve: Let cool for 5–10 minutes before serving.
