Baked Eggplant Parmesan with Ground Beef

Ingredients:

  • 1 teaspoon olive oil for brushing
  • 2 large eggs
  • 2 tablespoons water
  • 1 cup grated Parmesan cheese
  • 1 cup Italian-seasoned bread crumbs
  • Salt and ground black pepper to taste
  • 2 large eggplants, peeled and sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • 1 pound ground beef
  • 48 ounces chunky tomato sauce
  • 2 cups shredded mozzarella cheese

Directions:

  1. Preheat and Prepare:
    • Preheat your oven to 375°F (190°C). Lightly grease two baking sheets and a 9×13-inch baking dish with 1 teaspoon of olive oil.
  2. Bread the Eggplant:
    • In a shallow dish, whisk together the eggs and water. In a separate shallow dish, mix the Parmesan cheese, bread crumbs, salt, and pepper.
    • Dip each eggplant slice into the egg mixture, then press into the bread crumb mixture, ensuring an even coating. Gently tap off any excess crumbs and arrange the breaded slices on the prepared baking sheets.
  3. Bake the Eggplant:
    • Place the baking sheets in the preheated oven and bake for 20 to 25 minutes until the bottoms are golden brown. Flip the eggplant slices and continue baking for another 20 to 25 minutes, or until they are tender. Set the baked eggplant aside.
  4. Cook the Ground Beef:
    • Increase the oven temperature to 400°F (200°C).
    • Heat 2 tablespoons of olive oil in a skillet over medium-high heat. Add the ground beef, seasoning with salt and pepper. Cook the beef, stirring occasionally, until browned and crumbly, about 10 minutes. Drain any excess grease.
    • Stir the chunky tomato sauce into the cooked ground beef and bring the mixture to a simmer. Set the sauce aside.
  5. Assemble the Dish:
    • In the prepared 9×13-inch baking dish, layer 1/3 of the baked eggplant slices on the bottom. Top with 1/3 of the meat sauce, followed by 1/3 of the shredded mozzarella cheese. Repeat the layers two more times, finishing with a layer of mozzarella cheese on top.
  6. Bake and Serve:
    • Bake the assembled dish in the preheated oven for 10 to 15 minutes, or until the cheese is melted and the sauce is bubbling. Allow the dish to cool for 5 minutes before slicing and serving.
