This Homemade Granny Cake brings together the sweet flavors of pineapple and brown sugar with a rich, buttery icing. It’s an easy-to-make dessert that’s perfect for any occasion, offering a delightful combination of moist cake and creamy topping.

Ingredients:

For the Cake:

  • 1 1/2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 (20 oz.) can crushed pineapple, with juice
  • 1 cup packed brown sugar
  • 1 cup pecans, chopped

For the Icing:

  • 1 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter
  • 1 teaspoon vanilla extract

Preparation:

Preheat your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish. In a large bowl, combine the granulated sugar, flour, baking soda, and salt. Mix in the eggs and crushed pineapple with its juice until well blended. Pour the batter into the prepared baking dish, spreading it evenly. Sprinkle the chopped pecans and brown sugar on top.

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean. While the cake is baking, prepare the icing by combining evaporated milk, granulated sugar, and butter in a saucepan. Heat over medium-high heat until the mixture reaches a boil, stirring frequently.

Remove from heat and stir in the vanilla extract.

Once the cake is done, pour the hot icing evenly over it while it is still warm. Allow the cake to cool so that it absorbs the icing. Slice and serve to enjoy a delicious, moist treat.
