Ingredients:
- 300 g beef tenderloin, cut into small cubes
- Salt and black pepper, to taste
- 1 tbsp olive oil
- 1 tbsp butter
- 200 g mushrooms, finely chopped
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp fresh thyme leaves
- 1 sheet puff pastry (thawed if frozen)
- 1 egg, beaten (for egg wash)
Directions:
- Prepare the beef: Season the beef cubes with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the beef for about 1–2 minutes on each side until browned. Remove from the pan and let it cool.
- Make the mushroom duxelles: In the same pan, add the butter, onions, garlic, and mushrooms. Sauté over medium heat until softened and most of the moisture is cooked out—about 5–6 minutes. Stir in thyme and cook for another minute. Let it cool.
- Assemble the wellingtons: Preheat your oven to 200°C (400°F). Roll out the puff pastry and cut into 3-inch (8 cm) squares. Place a teaspoon of the mushroom mixture in the center of each square, followed by a cube of beef. Fold the corners of the pastry over the beef, pinching to seal.
- Brush and bake: Place the wellingtons on a baking sheet lined with parchment paper. Brush the tops with beaten egg. Bake for 15–18 minutes or until golden brown and puffed.
