Ingredients

  • 1 lb candied cherries
  • 1 lb candied pineapple
  • 1 lb pitted dates
  • 1 lb chopped pecans
  • 4 packages (8 oz each) flaked coconut
  • 3 tbsp all-purpose flour
  • 2 cans (14 oz each) sweetened condensed milk

Instructions

  1. Preheat & Prepare Pan:
    Preheat oven to 300°F (150°C).
Lightly grease a 10-inch tube pan and line the bottom with greased parchment paper.
  2. Mix Fruits & Nuts:
In a large bowl, combine chopped cherries, pineapple, dates, pecans, and coconut.
Mix thoroughly using your hands for even distribution.
  3. Add Flour & Milk:
Sprinkle in flour, then pour in the sweetened condensed milk.
Stir until the mixture is thick and fully coated.
  4. Pack & Bake:
Firmly press the mixture into the prepared pan.
Bake for 1½ hours, until the top is lightly golden and set.
  5. Cool & Unmold:
Run a knife around the edge, remove the rim, and carefully lift out the bottom.
Peel away the parchment while the cake is still slightly warm.

Tips

  • Slice thinly — this cake is dense and rich.
  • Keeps beautifully when wrapped tightly in plastic wrap.
  • Perfect for holidays — moist, fruity, and never fails!
