Ingredients:

  • 4 large green bell peppers, halved and seeds removed
  • 1 lb thinly sliced beef (like sirloin or shaved steak)
  • 1 medium onion, thinly sliced
  • 1 cup sliced mushrooms (optional)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and black pepper, to taste
  • 8 slices provolone cheese
  • Optional: Worcestershire sauce (1 tablespoon for extra flavor)

Directions:

  1. Preheat the oven:
    Set your oven to 375°F (190°C). Place the pepper halves cut side up in a lightly greased baking dish.
  2. Cook the filling:
    Heat olive oil in a large skillet over medium heat.
    Sauté the onions and mushrooms (if using) for about 4–5 minutes until softened.
    Add the thinly sliced beef, garlic powder, salt, pepper, and Worcestershire sauce (if using).
    Cook until the beef is just browned and cooked through. Remove from heat.
  3. Assemble the stuffed peppers:
    Place a half slice of provolone cheese inside each pepper half.
    Fill each pepper generously with the beef and onion mixture.
    Top each with another slice of provolone.
  4. Bake until bubbly:
    Cover with foil and bake for 20 minutes.
    Uncover and bake for an additional 5–7 minutes, or until the cheese is fully melted and golden.
  5. Serve and enjoy:
    Garnish with fresh parsley if desired. Serve hot and enjoy this low-carb comfort food!
