Ingredients:
- 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup evaporated milk
- Pinch of salt
- 2 large eggs
- 1 unbaked 9-inch pie crust
Directions:
- Preheat your oven to 350°F (175°C) and set aside a 9-inch pie dish with the unbaked pie crust.
- In a large mixing bowl, blend the mashed sweet potatoes and melted butter until smooth.
- Add the sugar, evaporated milk, eggs, vanilla extract, cinnamon, nutmeg, and salt to the sweet potato mixture. Whisk until fully combined.
- Pour the mixture into the pie crust, spreading it evenly across the surface.
- Bake for 55-60 minutes, or until the center is set and a toothpick comes out clean. If the crust edges brown too fast, cover with foil.
- Let the pie cool completely before slicing. Serve with whipped cream, if you like.
