Savory Turkey & Zucchini Chickpea Skillet

Ingredients:

  • 1 small onion, finely chopped
  • 1 pound ground turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste
  • 2 medium zucchinis, diced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Heat the olive oil: In a large skillet over medium heat, add olive oil and heat it up.
  2. Sauté the onions and garlic: Add the chopped onion and sauté for 3-4 minutes until softened. Stir in the minced garlic and cook for another minute until fragrant.
  3. Cook the turkey: Add the ground turkey, breaking it apart with a spatula, and cook until browned and fully cooked, about 5-7 minutes.
  4. Add zucchini and chickpeas: Stir in the diced zucchini, chickpeas, cumin, smoked paprika, salt, and black pepper. Mix well to combine.
  5. Cook until tender: Cook for another 5-7 minutes, stirring occasionally, until the zucchini is tender.
  6. Finish and garnish: Remove from heat and garnish with fresh parsley. Serve warm.
