Ingredients:

  • Watermelon rind
  • Sugar
  • Water
  • Optional flavorings: vanilla extract, citrus zest, mint
  • Optional spices: cinnamon, cloves, ginger

Instructions:

  1. Prepare the Rind:
    • Peel the green outer skin off the watermelon rind, leaving the white part.
    • Cut the rind into small, bite-sized pieces.
  2. Boil and Soak:
    • Boil the rind pieces in water until tender.
    • Drain and soak in cold water for a few hours or overnight to remove bitterness.
  3. Dry the Rind:
    • Drain the soaked rind and pat it dry with paper towels.
  4. Make the Syrup:
    • In a saucepan, combine equal parts sugar and water.
    • Bring to a boil, stirring until the sugar dissolves.
    • Add optional flavorings and spices, then simmer.
  5. Candy the Rind:
    • Add the dried rind to the syrup, ensuring it is submerged.
    • Simmer until the rind becomes translucent.
  6. Cool and Dry:
    • Remove the candied rind from the syrup and place it on a wire rack to cool.
    • Optionally, roll the cooled candy in additional sugar or spices.

Tips:

Choose firm, unblemished watermelons for the best rind.

Store candy in an airtight container at room temperature for several weeks.
