Cajun-Inspired Shrimp and Sausage Alfredo Pasta

Ingredients:

  • 8 oz smoked sausage (sliced)
  • 1 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 2 cups heavy cream
  • 2 tbsp unsalted butter
  • 1 lb large shrimp (peeled and deveined)
  • 8 oz fettuccine or penne pasta
  • 3 garlic cloves (minced)
  • 2 tbsp Cajun seasoning

Instructions:

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the fettuccine or penne pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. Prepare the Shrimp and Sausage: Season the shrimp with 1 tablespoon of Cajun seasoning. Slice the smoked sausage into 1/2-inch thick rounds.
  3. Sear the Sausage: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned on both sides, about 2-3 minutes per side. Remove the sausage from the skillet and set aside.
  4. Sear the Shrimp: In the same skillet, add the remaining 1 tablespoon of olive oil. Add the shrimp and cook until pink and cooked through, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside with the sausage.
  5. Make the Alfredo Sauce: Reduce heat to medium. Add the unsalted butter to the skillet and let it melt. Add the minced garlic and cook for 1 minute until fragrant.
  6. Add Heavy Cream and Parmesan Cheese: Pour in the heavy cream and bring the mixture to a simmer. Let it cook for 2-3 minutes until slightly thickened. Remove from heat and stir in the grated Parmesan cheese until melted and smooth. Season with the remaining 1 tablespoon of Cajun seasoning.
  7. Combine the Pasta, Shrimp, Sausage, and Alfredo Sauce: Add the cooked pasta to the skillet with the Alfredo sauce. Toss the pasta in the sauce until well coated. Add the cooked shrimp and sausage back into the skillet and toss everything together.
  8. Serve: Serve hot, garnished with chopped parsley or scallions if desired. Enjoy!
