This hearty casserole brings together the classic flavors of beef stroganoff with the added comfort of gooey cheese and perfectly cooked pasta. It’s an easy, crowd-pleasing dish that’s ready in under an hour!

Ingredients:

  • 1 lb (450 g) ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz (225 g) mushrooms, sliced
  • 2 cups (475 ml) beef broth
  • 1 cup (240 ml) heavy cream
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • Salt and black pepper, to taste
  • 2 cups (200 g) shredded cheddar cheese
  • 1/2 cup (50 g) grated Parmesan cheese
  • 3 cups (300 g) uncooked pasta (egg noodles or penne work great)
  • 2 tbsp olive oil

Directions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Beef and Vegetables:
    • In a large skillet, heat olive oil over medium heat. Add the ground beef and cook until browned, about 5–6 minutes.
    • Add the chopped onion, garlic, and mushrooms. Cook for another 5 minutes, stirring occasionally, until the onions are translucent and the mushrooms are tender.
  3. Make the Stroganoff Sauce:
    • Stir in the beef broth, heavy cream, Worcestershire sauce, paprika, salt, and pepper. Bring to a simmer and cook for 5–7 minutes until slightly thickened.
  4. Combine and Assemble:
    • Preheat your oven to 375°F (190°C).
    • Stir the cooked pasta into the beef mixture until well combined.
    • Pour the mixture into a greased 9×13-inch baking dish.
  5. Add the Cheese and Bake:
    • Sprinkle the shredded cheddar cheese and Parmesan evenly over the top.
    • Bake in the preheated oven for 15–20 minutes, or until the cheese is melted and bubbly.
  6. Serve:
    • Let the casserole rest for 5 minutes before serving. Garnish with chopped parsley if desired.

Tips:

  • For a smoky flavor, add 1/2 tsp smoked paprika to the sauce.
  • If you like a crunchy topping, sprinkle breadcrumbs mixed with a bit of butter before baking.
  • Swap the cheddar for Gruyère or Swiss for a richer taste.
