Loaded with hearty ground beef, tender rice, and gooey cheddar cheese, it’s a delicious, one-dish meal that’s easy to prepare and sure to satisfy.

Ingredients:

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, drained
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream

Directions:

  1. Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, cook the ground beef, onion, and garlic over medium heat until browned. Drain any excess fat.
  3. Stir in the rice, beef broth, diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
  4. Remove from heat, stir in the sour cream and half of the cheddar cheese.
  5. Transfer the mixture to the prepared baking dish, spreading it evenly. Sprinkle the remaining cheese on top.
  6. Bake for 25-30 minutes, or until the cheese is melted and bubbly. Serve warm and enjoy!
