This indulgent Chocolate Chip Cookie Dough Ice Cream Cake combines creamy ice cream layers with delicious cookie dough and a crunchy chocolate crust, all topped with rich ganache. A perfect dessert to impress at any party or celebration!

Ingredients

Crust:

  • 2 cups chocolate sandwich cookie crumbs (like Oreo) 🍪
  • 1/4 cup unsalted butter, melted 🧈

Cookie Dough:

  • 1/2 cup unsalted butter, room temperature 🧈
  • 1/2 cup brown sugar, packed 🍂
  • 1/4 cup granulated sugar 🍚
  • 2 tablespoons milk 🥛
  • 1 teaspoon vanilla extract 🌿
  • 1 cup all-purpose flour 🌾
  • 1 cup mini chocolate chips 🍫

Ice Cream Layers:

  • 1.5 quarts vanilla ice cream, softened 🍦
  • 1.5 quarts chocolate chip cookie dough ice cream, softened 🍪🍦

Ganache:

  • 1 cup semi-sweet chocolate chips 🍫
  • 1/2 cup heavy whipping cream 🍶

Instructions

  1. Prepare the Crust:
    Grease a 9-inch springform pan. In a bowl, combine the chocolate sandwich cookie crumbs and melted butter. Press the mixture into the bottom of the pan to form the crust. Freeze for 10 minutes.
  2. Make the Cookie Dough:
    Cream together the butter and sugars until light and fluffy. Add the milk and vanilla extract, and mix well. Stir in the flour until smooth, then fold in the mini chocolate chips.
  3. Layer the Ice Cream and Cookie Dough:
    Spread half of the vanilla ice cream over the crust, followed by half of the cookie dough mixture in chunks. Freeze for 1 hour.
  4. Add the Cookie Dough Ice Cream Layer:
    Spread the chocolate chip cookie dough ice cream over the cookie dough layer. Add the remaining cookie dough mixture in chunks. Freeze for another 1 hour.
  5. Top Layer:
    Spread the remaining vanilla ice cream over the top layer. Freeze for 4-6 hours, or overnight, until firm.
  6. Prepare the Ganache:
    Heat the heavy whipping cream in a small saucepan until it starts to simmer. Remove from heat and pour over the chocolate chips. Let it sit for 2 minutes, then stir until smooth.
  7. Finish the Cake:
    Remove the cake from the springform pan and pour the ganache over the top. Freeze for another 30 minutes before serving.
